Vegetable Lasagna

A high fiber, low fat, low calorie main dish that can be easily changed with a variety of ingredients.

Freeze or serve hot
Vegetarian or with meat

Ingredients:

-Oven ready whole grain or whole wheat lasagna noodles.
Quantity is determined by size of cooking dish and number of layers-

- Prepared *Sauce is composed mainly of vegetables but soy or meat
can be added in its preparation.

- Layers composed of vegetables, corn, peas, mushrooms, peppers, squash, turnip,
cole slaw etc.
Fresh or frozen.

*Prepared Sauce ( or use your own or bottled)
frozen or cooked the day before
In a slow cooker
Add diced onions, garlic in tbsp of canola or Extra Virgin Olive oil
(unless you have a no stick pot)
Optional crumbled Soy burger or
cooked lean ground turkey

Cook on high for 1 hour then reduce to low heat

Add Vegetable puree from juicing (carrots, celery, 1/2 apple)
Fresh or canned tomato pured, crushed, diced
Spices: rosemary, Italian seasoning
Optional – brown rice

Add low sodium vegetable stock or water to achieve desired consistency
Cook for additional 3-4 hours
Stores for 2 days in refrigerator or freeze in containers.

Assembly of Lasagna
Use cookware sized to fit your toaster oven, conventional oven
or suited to freezing (now or later)
Add a thin layer of sauce to the bottom of dish.
Add layer of oven ready lasagna noodle, do not overlap
Top this layer with mushroom, pepper, cole slaw, corn,
or any fresh/frozen diced vegetable
Add some prepared sauce to cover this layer.
Add an additional layer of noodles and then
sauce and added vegetables or soy or cooked ground meat

Continue this process for as many layers as you wish or that will fit the baking dish.
Final layer is noodlea with a covering of sauce.

Cooking Time:
This is totally dependent on the noodles, which normally range from 40 minutes to 1 hour at 425 F
Left cool for 5 minutes after cooking.
Serve immediately or freeze in containers after cooling.

Serving Suggestions: As a main course
With side dish cole slaw, cooked chicken breasts
Baked Potato, Potato Wedges
Shredded Low Fat cheese or cottage cheese can be added
to the layers during assembly.

Calcium

Lifestyle modification and statin therapy (Lipitor etc) can slow or even reduce calcium deposits in the coronary arteries of patients without symptoms, but at risk for coronary artery disease, who still have no symptoms.
Calcium and Magnesium levels must be in balance for your heart to operate efficiently – calcium for muscle contraction and the magnesium for relaxation of the muscle.

Calcium is also extremely important for bone and teeth growth and repair. Getting adequate calcium and vitamin D is an important factor in reducing your risk of osteoporosis.

Studies show that in every age group people with higher calcium levels have a greater risk of heart attack than do people of the same age with lower scores, however the word is still out the benefits of heart scans to interpret levels. Calcium amounts in the body can also be determined by simple blood tests and from 24 hour urine testing.

For older women – maybe check with your health care provider.
For older men – Experts recommend a daily intake of 1,200 milligrams of calcium for men older than age 50.

Studies have questioned the benefits of supplements as compared with Dietary Calcium.
The public often believes that cow’s milk is the sole source of calcium.

Other excellent sources of calcium exist so that even vegans (no dairy) eating varied diets that contain these foods need not be concerned about getting adequate calcium.  Sources of well-absorbed calcium for vegans include calcium-fortified soy milk and juice, soybeans and soynuts, bok choy, broccoli, collards, Chinese cabbage, kale, mustard greens, and okra.

St Patrick’s Day

Another year has rolled around

and spring can not be far behind as the world takes notice of St Patrick’s Day.

My mother was of Irish ancestry, so I can stake a legitimate claim to having Irish blood. As does Mrs Edwards with both parents of Irish stock.

Here’s to you Irish of the World

Over the lips, past the gums ….Look out stomach here it comes.

In actuality, alcohol consumption, has more of an effect than just a stomach warning.

I personally had my last drink about 4 years ago. It wasn’t for a crusade against alcohol, but simply at the suggestion of my cardiologist. My heart arrhythmia needed to be stabalized and alcohol would interfere with that.

I was not a tea-drinker before that and admittedly, I do miss a cool draft especially on a warm summer’s day or with a toasted ham & cheese on hot buttered bread.

Drinking alcohol can be harmful for some people. Those who have heart failure, cardiomyopathy, high blood pressure, diabetes, arrhythmia (irregular heart rhythm), a history of sudden cardiac death or stroke, obesity, high triglycerides, or are taking medications should speak to their doctor before drinking alcohol. Similarly for those who are pregnant or prone to alcoholism should reflect on finding others ways to find enjoyment.

Alcohol is not all bad and there are some benefits for some people.

  • it lowers blood pressure
  • raises the good cholesterol HDL
  • helps prevent artery damage caused by high LDL, or “bad ” cholesterol.
  • acts as a natural blood thinner, preventing clots
  • “On the other hand, drinking more than three drinks a day has a direct toxic effect on the heart.

    Heavy drinking, particularly over time, can damage the heart and lead to high blood pressure, alcoholic cardiomyopathy, (enlarged and weakened heart), congestive heart failure, and stroke.

    Heavy drinking puts more fat into the circulation in your body, raising your triglygeride level.

    That’s why doctors will tell you “If you don’t drink, don’t start”.

    There are other, healthier ways to reduce your risk of heart disease like eating right, getting regular exercise and maintaining a healthy weight.” (Source: Womens’ Heart Foundation.org)
    So drinking alcohol affects the stomach, heart, blood pressure, bleeding, your weight and who knows what else.

    It wasn’t a risk that I wished to take- so I just eliminated its consumption.

    Blood Thinners

    If you are on Blood thinners such as Coumadin or Warfarin. you are already aware that what you eat especially in terms of the foods’ Vitamin K content is going to greatly influence the effect of this medication which was likely originally prescribed to prevent blot clots and stroke.     A Backward Step?

    When you first started the evolution for a healthier life style, hopefully you didn’t fuss over the idea for weeks. Instead you realized that it would take some effort and simple went with it the next day.

    As time progresses there will be days when you will ‘fall off the wagon’ – and you are faced with a significant choice -to lay down and wallow in the mud, for you have found a perfect excuse to continue eating badly for the rest of the day or for just to loaf around.

    I’ll do it tomorrow Does not make sense.

    Okay, you pigged out while at a wedding, or a night out, a bout of depression.

    You have indulged yourself, don’t make further bad choices by waiting until tomorrow or next Monday or the first of the month or after Christmas.

    Get right back into the routine immediately, a delay can only mean more weight added or further harm to your heart and its functions.

    End up just taking a side step not a step backwards in your health for a momentary indulgence.

    The Fine Print

    Having open heart surgery opens up more than your chest. Post operation recovery and beyond, often includes a myriad of prescription medications which were likely prescribed by your surgeon or their team.

    These script have likely also been checked for harmful interactions. Later on especially if you are being seen by other health professionals, specialist as a cardiologist, arrhythmias, family doctor, one of the clinic doctors etc a careful scrutiny needs to be taken for any prescribed medications.
    But this also involves over the counter stuff and vitamins and herbal supplements and in some cases foods as well. (Lipitor useage means the end of eating grapefruit)

    Make sure that you read the information that is given with any need medications not only for use, but also side effects and drug interactions.
    This is a very good time to consolidate  all prescriptions from one pharmacy, so that they too are keeping track of what you are on.

    Diluting the sodium

    If you or someone else has already bought prepared food with high salt content, you can still use. The trick is to reduce the salt concentration by diluting it with something else.

    If it’s a soup or mostly liquid

    Add equal amount of water, or stock and
    use it over 2 meals instead of one.

    If it’s mainly solid

    Achieve a 50% reduction simply by reducing
    the portion size by 50%.
    or eating over 2 meals
    or sharing with another person,
    or freeze half for later
    Add something else to the plate to complete the meal.
    Add a low fat, low salt sauce
    Add vegetables, rice or grains.

    The Soul & the Laneway

    The storm of the previous 2 days had left a white fluffy blanket across the driveway. The front lawn was similarly covered but the expanse was interrupted by smooth bulges, the last remains of summer’s flower beds.

    I took in the view from the front window. Inhaling the magnificence of what lay before me, in the warmth of the living room, I allowed my mind to wander. Any thoughts of pressing matters, gradually dissolved in the recesses as I only reflected on the white expanse, the millions of perfect snow crystals. Imagining the multitude of shapes my mind was at ease and a sense of peace overcame me.

    Once I had restore my batteries, I knew that plowing the 100 feet of laneway, would be much easier. I slipped on my tall boots and grabbing coat, hat and gloves, I was ready to battle the foe that lay ahead.

    The plan for an easy task, however, failed to materialize as I positioned the truck to make its first mole hill into a mountain. Slipping it into reverse, the wheels just spun on the ice below and I could only move from side to side instead of backwards. Those millions of perfect snow crystals now held the plow blades in their tight grasp. Release would take nearly 20 minutes, before the remainder of the driveway was cleared for today.

    Mind Exercises

    Feed your brain both with the proper foods as nourishment but also to continue to develop it with simple mind exercises.

    Tonight is set for the spring time change, when clock are moved forward one hour.
    The regeneration time for the water softener is locked in for 2:00 am and only changing the set time of day can you delay or advance the 2:00 am setting.
    Q1:What is the clock setting on the water softener control needed for tomorrow night so that the regeneration will start at midnight rather than 2 AM [See A1 below]

    Q2:”Let’s see that means that tomorrow night it will be darker after supper or earlier?” Supper is usually at 6 pm EST. [See A2 below]
